Deep Fried Fish Cake with Thyme
250g potatoes
250g tuna
1/2 onion (chopped)
1 teaspoon thyme
salt and black pepper
120g flour
1 egg, beaten
100g bread crumbs
1 teaspoon minced garlic
6 tablespoons mayonnaise
1. Bring potatoes to a boil until tender. peel the cooked potatoes and put through a food mill or mash with a hand-held potato masher.
2. Add tuna to the mashed potatoes, then add chopped onions, thyme, salt and pepper.
3. Split the mixture into 8 parts, use your hands to form a potato fish cake.
4. Dip each fish cake into the flour, then shake off the excess. Next, run the cakes through the egg to coat it lightly then dip the fish cakes into the bread crumbs.
5. Heat oil over medium heat until hot and shimmering. Then deep fry the fish cakes until golden brown, serve with garlic and mayonnaise.
