蒜頭浸 米醋

Feel free to answer my question in Chinese.

I minced a lots of garlic into a big jar about 8/10 full and covered with rice vinegar. Should I mince the garlic or put the whole clove of garlic inside? What's the difference between soaking the clove of garlic or mince the garlic? Is the result /outcome the same? Am I putting too much of garlic?

Thanks for your information. I appreciate that. The rice vinegar I bought was diluted with water to 4.2% acidity. What should I do with these diluted with water vinegar? Can these garlic vinegar are still eatable or healthy?

不如先讓我說說浸泡蒜頭醋的程序:

用十份米醋加九份蒜頭,蒜頭要先去衣。
用玻璃瓶浸泡並密封瓶蓋,務必所有蒜頭要用醋蓋過。
存放在暗涼的位置,最初蒜頭會呈現淺淡的紫藍色,稍後會消失。
40日後可飲用。
飲用蒜頭醋可降膽固醇、有助減肥去脂、消除疲勞、防衰老、舒緩鼻敏感、治療關節炎、傷風感冒、預防癌症、去斑、去暗瘡、治糖尿病。
有兩件事一定要注意:

不要用糯米醋,因為糯米醋與蒜頭的作用比較慢,而且會影響食用價值。不要用外國醋,因為外國人造醋一般是用醋精加水,失去了天然米醋的功效及香味。
浸泡的器皿千萬不可用膠瓶,其實泡製所有醋也不應使用膠瓶。
我相信你把蒜頭磨碎了也可以吧,可能會加速了泡製的時間吧!
