sucrose , glocose , sugar , carbohydrates 四者之間的關係~
我搞極都唔清楚呀呀呀~~~~

Carbohydrates: Compond of Carbon and Water! ie.Cx(H2O)y
eg.
Monosaccharide (單糖) eg. sugar crystal, glucose...
Disaccharide (雙糖) eg. Sucrose, Maltose....
Oligosaccharide( 寡糖) eg. Fructooliosaccharide...
Polysaccharide (多糖) eg. starch, cellulose...
Sugar alcohol (糖醇) eg. Xylitol, Maltitol...
簡單來說, Carbohydrates係可以有好多細分,(像脂肪都分好多種咁樣)
只不過有不同的chemical bonding/ structural formula 所以有唔同名稱!
而從水解作用(Hydrolysis), Carbohydrates 有以下關係:
. Sucrose > > Glucose + Fructose
. Maltose > > Glucose + Glucose
. Lactose > > Glucose + Galactose
. Cellobiose > > Glucose + Glucose

Properties of Starch(澱粉):. Non- sweetness. Non-crystalline white powder. Insoluble in cold water. Can be hydrolysed into glucose(by acid or enzyme)澱粉主要作用為"凝膠化"(Gelatinization), 即煮餸中的"打芡"

Sugar 你都可以話係一個 "sub統稱", 因為有好多糖種都可納入 sugar 中, 但主要是單糖及雙糖類, 其結構是結晶狀, 能溶於水!

carbohydrates可分為3種
分別係monosaccharides,disaccharides同埋polysaccharides.

glucose係monosaccharide.
sucrose係disaccharide.
所以sucrose係兩個或上上的glucose molecule進行condensation而form出黎.

至於sugar,
例如cane sugar,rock sugar,table sugar
主要成份都係sucrose的.

第一係glucose唔係 glocose
先講sucrose同sugar
sugar係經加工的sucrose eg:漂白........
之後係glucose同sucrose
sucrose都有glucose成分不過多左d野
carbohydrates可以分解成glucose
