They are some type of salmon/trout cross caught in Montana. They have been cleaned (gutted) but still have the skins and heads attatched.

the best is to defroze it first so that the frozen food smell is gone. it will go back to its freshness when it's completely defrozed. pad the fish dry with kitchen paper.

grilling/frying is the best for frozen items as it has a smoky flavor. you can put it on a hot grill (pad the fish with some flour first) or put on a hot oiled pan. be careful when you need to turn fish - use more flour to coat the fish.

when the fish is cooked, a few minutes will do. when you put a fork into the fresh, it can easily go through. scrap big pieces of fresh using a knife when serving. finish one side of the fish then the other side.

you can marinate the fish with a little bit of salt & pepper (some dill if desired). serve with lemon juice then you will have the best original flavor from a good fish!

enjoy!
