Good job, 小美. The results of Maths and Economics are competitive enough for university entry, the people of Economics, Accounting and Finance departments should be happy to see your application.
In your case, you don't need to think too much.
1. Ordering your preferance: Could it be (1) Economics (2) Finance (3)Accounting?
2. It's difficult to get into BBA in CUHK & UST, right? If you are not confident, choose Economics as the 1st choice, BBA as the 2nd choice. The same thing can apply to HKU as well.
3. For other school, just choose what you really want to study as the 1st choose.
4. Of course, you work hard on HKAL. The results really help you.
*** Even you choose Economics, you can still study other subjects or have a minor.
Refer to your questions you asked earlier,
Economics suits for everybody, as long as you are interested in Economics, no matter you are a boy or girl and major in arts, business or science.
I think you are a lucky one, since you studied business in F.4 and 5 and had a good result in Economics. You should understand more about Economics than other students. Do you study Economics in HKAL? If you do, you should know higher level of Economics is not only about theory, but also Maths. Your Eco and Maths background will help you a lot and make you ahead in the first year of university. Referring to my friends who studied Eco in university, they said Eco is about way of thinking and logics. They are happy with what they studied. They work in different fields, for example, government, commercial (banks, financial institutions and coporations), academic, etc.
According to HKU, they also look for people have good language skills. You got credit in Chinese which is pretty good. Your English result is acceptable. As I said, if you can have a better results in HKAL, you should be fine.

At last,
Interest and job prospect are both important and can be co-existed. You consider your preference and ability, pick the right major and have fun studying it. For sure, you will do well since you like it. After graduate, find a job and work hard, you will have a good career. Otherwise, vice versa.
If you don't like the other disciplines, do not put them in your preference list.

2. It doesn't mean you pick something you dislike, you have a higher probability to enter to university. There are still competition in other disiplines.
3. What if you are selected by the department you dislike, study or give up?
4. If you really want to study BBA or Economics, I will choose them in every university because you will have a greater chance to study it. Also, the admission officers know you have made up your mind. When they consider something beyond results, you will have some credits comparing with other students who don't know what they are doing.
