I had been to the Fish Market from the China town.
1. Open at 7:00am
What you can see in the Fish Market is the seafood restaurants, the seafood food court, the seafood wet market, the pier, etc. If you want to have some nice food, every restaurant have different opening time. My suggestions are as below.
2. Take the light rail from the stop of CAPITOL SQUARE (Hay St, Chinatown) to FISH MARKET (Cnr Jones & Miller St,Pyrmont). Then you will see the sign to the Fish Market.
3. Travel Time: 16 minutes.
Frequency: Every 10-15 minutes.
Sat 6am to midnight.
Adult across two zones: Singel AU$4.00 Return AU$5.50

My suggestions of the seafood restaurant:
I had been to the 2 seafood restaurants at the entrance of the Fish Market. The neat and clean one, and the De Costi. The first one got the great oysters. De Costi had tasty lobster and fresh fish and chip.

The Doyles is famous. I went to Doyles, Circular Quay instead of the Fish Market one. Circular Quay has some expensive seafood restaurants. The view and service are good.
