Why do we have bubbles when we boil water?
Is it when heat energy break down the water molecule and release the oxygen inside?

No, when water is boiling, it is a physical change, not chemical, the water molecule is still H2O.

When you boil water, usually you heat at the bottom, thus water at the bottom part will be boiled and changed to vapour first. After changing to vapour, it has to leave the water and that is the bubbles you see.
