Senior Exit Project Help?

I helped evaluate several of these for a local high school. Here are some of the topics that were covered:
Saddle Making
Horse shoeing
Teaching elementary language (Spanish) class
Building a water garden
Restoring an old tractor
Sports Photography -- following the basketball team
Building park benches
Fundraiser for a South American Mission
Fundraiser to build a computer lab in an African school
Designing and making a quilt
Planning the menu and cooking a formal dinner

At this particular school, the exit project is in three parts -- the students must first write a related research paper (usually done in the junior year), complete the actual project (usually in the summer prior to or first semester of their senior year) and prepare a presentation on their project.
