There is no direct train running from the Netherlands to Italy, you have to make a change in France or Germany.
Since you are holding a Europass, you should go to Italy via Germany because the Thalys running between Amsterdam and Paris is very expensive.
From Amsterdam to Rome, you can consider the following schedule

Amsterdam (depart 16:34) -- Koeln (arriving 19:12) Train no: ICE125
Koeln (depart 20:18) -- Milano (arriving 07:45) Train no: NZ301
Milano (depart 08:00) -- Roma (arriving 12:30) Train no: ES9429
Totally you have to travel in train for around 20 hours, it is strongly not recommended... Since you also need to pay the reservation fee for these 3 jounery which will be approx. 50 euro. You may consider to fly from Amsterdam to Roma. It should not cost too much, but you can save many time and energy...

There is no direct train from Amsterdam to Rome.

You need to change at Paris or Germany.

Option 1 : (2/11)
Only change once is the train of 12:56 (pm) and will arr. at 9:50 am.
Travel time is 20:54 hours.
Arrival the next day at 09:50 Roma Termini

Option 2: (2/11)
And for the fastest train is the 12:34 (pm) and will arr. at 8:09 am.
Travel time is 19:35 hours. And you need to change at 16:36 Frankfurt(M) Flughafen Fernbf, and at 21:03 München Hbf.
Arrival at 08:09 Roma Tiburtina the next day.

For the first change you have 10 min. (at the same platform).
For the sec. change you have 1 hour. (from platform 22 to 12)
