說明:
不飽和脂肪酸由氫原子與雙價鍵碳原子結合,假如雙價鍵處的氫原子在同一個方向,稱為 Cis 型,假如雙價鍵處的氫原子分別在不同的方向則為 Trans 型。

在自然界中存在的油脂或油多為 Cis 型脂肪,只有少數如反芻動物的油脂內可以發現 Trans 型脂肪,但大部分的 Trans 型轉化脂肪大多在油或油脂經過氫化作用而產生。植物性油脂的不飽和脂肪酸含量高,因此脂質較軟,加入氫分子之後,將部分的不飽和脂肪酸轉變為飽和脂肪酸,可以提高油脂的硬度,但在氫化的過程,有可能改變不飽和脂肪酸部分氫分子的排列方向,而形成反式脂肪。
