Normally you shouldn't have any problems even if you buy everything display in the shop.

The quantity limitation is applied to those people who want to buy the same item(design) in bulk. This is to avoid people resell LV to those location where no LV shops. But it also depends on the sales person. However, I don't think they do mind in HK.

If you want to buy 1 per each design then you shouldn't have any problem.

of course there is no limitation on how much you are going spend.

Just be yourself but do dress like you have the money to spend to avoid any suspicious. Think about those artists/movie stars, they buy so many in a day and even get the free delivery services.
