我想要一d侍應應該要識的英文用語/網。
因為我做侍應個度會遇到一d外國人。

#1 歡迎光臨Greetings on Guest Arrival

光顧食肆的客人林林種種,不乏要用英語對答的情況。客人步進食肆,需第一時間給予良好印象,有禮貌的應對是怎樣的呢?

程序一:「有否預訂留座?」
客人說道“Table for two. (兩位)”,侍應可回應 "Do you have a reservation, sir?"來打開話匣子。若客人的回覆是 "No.",而食肆內又暫時未有座位,侍應便要請客人稍候片刻“I'm sorry. We're full now. (現已滿座) Would you mind waiting for a while?(可否稍等片刻)”要等多久?可回答“Just a while, sir."

程序二:座位安排
領客人進坐,可說“May I show you your table?" "May I" 這一類引領說話,既有效,又能讓客人感到受重視。「就是這桌子了。」,英語是“This is your table, sir/ madam.”

程序三:顧客特別要求
客人可能有特別要求,說要坐靠窗口位置,“We want a table by the window." 你動腦筋想法子之際可道 "Let me see what I can do."


#2 點菜Ordering food

食肆內接待客人,除了為客人安排座位外,接著要應付的環節就是點菜了。菜式的名稱當然要知曉,落單點菜又如何應對呢?

情況一:「要否點菜呢?」/ "Would you like to order now ?"
此刻﹐客人很可能會要求先看菜單﹐"Oh, can we have the menu, please ?" 聰明的侍應必立刻回應 "Sure, here you are."及遞上菜單。

情況二:本店特別推介
若客人要求侍應介紹菜式 "What would you recommend?"侍應的回答可以是 "Well, I recommend all our dishes, but our special dishes for today are ..."例如 "Our special dishes for today are shark's fin soup (魚翅) and lobster (龍蝦)in black bean sauce."

如客人再要求 "What other special dishes do you have?"侍應可以將大廚特別推介的菜式介紹給客人。
侍應: "Our chef's recommendations are snake soup (蛇羹), deep fried chicken (炸雞)..."

情況三:讚賞客人
點菜後,侍應大可讚賞客人的選菜 "Very good choices, sir/madam."接著可再問: "Would you like anything else ?"

#3 應付投訴Dealing with Complaints

在食肆內很多時遇到客人投訴,身為服務行業的員工,應如何處理服務上的過失及客人的不滿呢?

情況一: 「食物弄錯了?!」
當客人發覺奉上的食物並非點選的菜式,要問個究竟,侍應當立刻致歉 "I'm sorry. There must have been some mistakes, sir/madam. I'll change it for you right away. (我立刻為你換回所點的食物)"

情況二: 食物不夠熱﹐如何致歉?
此種情況,惟有說 "Oh! I'm terribly sorry! (極之對不起) I'll heat it up (弄熱)for you at once."

若客人對諸般服務極為不滿,面露不悅之色,如何補償呢?
服務員: "Please accept our apologies. (請接受我們的歉意) I assure you this won't happen again. (我向你保證這種情況不會再發生)"
以贈飲致歉又如何?"Could I offer you a complimentary drink? (我可否送你一個贈飲呢)"

情況三: 「燒鴨已沽清」
客人所點的食物已沽清,服務員要解釋: "I'm sorry. We have run out of roast duck tonight. (燒鴨已沽清) Would you like to order something else? (點另一個菜式好嗎)"

#4 應付意外犯錯Handling Accident

在西餐廳內,侍應很多時以托盆托著數杯飲料服務客人。若不慎跘倒,淋濕客人,怎麼辦呢?

情況一:客人外衣濺濕了,怎辦?
侍應當立刻回應, "Oh I'm sorry. It's my fault. (是我的過錯)" 再提出 "I'm so sorry, madam/sir! Let me get you a towel to dry it. (我拿毛巾替你弄乾) I'm really sorry."

情況二:大意的侍應又撞板,再次濺濕同一客人
遇上客人忍不住大罵: "Oh no, not again. It's you again. (又是你) You're really clumsy, aren't you?" 此時,要平息客人怒氣, "I'm sorry, madam."似乎不足夠,立刻回應,即時跟進,更能緩和緊張氣氛。
侍應: "Yes, I will be very careful next time."

情況三:侍應把布淋濕了
侍應先要對客人說對不起, "I'm really sorry." 然後表示會更換布,"I'll change the tablecloth right away."

可見單是對不起的方式,也五花八門,且看以下例句:"Sorry.", "I'm sorry.", "It's my fault.", "I'm terribly sorry about this", "Please forgive me."


#5 結賬Paying the Bill

客人結賬時,除了禮貌性的問候如:“How did you enjoy your meal?",以及客人離開時所說的客氣說話,"Have a nice day!"及"Please come again!"去表達款待客人的誠意之外,還有不同的情況要注意。

情況一:只答「OK」就夠?
若客人要求結帳,不要單回應一句「OK」,這是不禮貌的。英文用語有多不勝數的回應方式,例如:“Right away.”( 意指「即刻就到」),“Certainly.”,"Sure.", 甚至“Yes, madam/sir.”

情況二:「一成服務費已包括在內。」
侍應遞帳單給客人時,可說 "Excuse me. Here's your bill." 若客人疑惑帳單金額與實數不符,侍應大可主動告知客人:"The bill includes a 10% service charge."

情況三:「抱歉,本店不接受此咭。」
假如店舖不接受某類信用咭結賬,應如何與客人交待呢?
侍應:"I am sorry, madam/sir. We don't accept this card. Do you have any
other cards?"

情況四:「對不起!因系統故障,只接納現金付款。」
若信用咭系統發生故障,店舖只能接受現金交易,員工應如何面對客人?
侍應: "We are sorry, madam/sir. The system is down(系統發生故陣) for
the time being(現時). Would you mind paying cash?"
