用假設法語氣寫句子，基本有四種時式，就是
１）假設法現在(Subjunctive Present)
２）假設法未來(Subjunctive Future)
３）假設法過去(Subjunctive Past)
４）假設法過去完成(Subjunctive Past Perfect)

你的句子應屬於３）假設法過去
而假設法過去，又有三種用法，
ａ）用於與現在之事實相反的想像
　如：If I had money enough, I could buy the house.
　　　If I were not ill, I would go skiing.
ｂ）與未來之事實相反的假設（if ... were to..., I would...)
　　如：If I were to go abroad, I would go to England.（注：但事實上將來不可能去外國，所以我不會去英國）
ｃ）現在難以實現的希望
　　如：I wish I could fly like a bird.
看了以上的用法，你大概知道，你在用Subjunctive Mood的文法沒有錯(If ... gave..., I would...)，但你的句子的won't應改為could not，而live my life則只須說live就得了
你的句子應寫成
If you gave me one more chance to tell you how I was feeling, I would sing to you and tell you I could not live without you
