Because, this is what Amy said, you are say what she said to somebody else. When Amy said "we", the "we" is not including you, I mean yourself, so "we" have to change to "they".

"Amy said that we had drawn a wall painting the week before" in the active speech should be " Amy said ,' You drew a wall painting last week .' "

i think you want to say you do not understand why we have to change "we" to "they" right?

we have to change it because in the sentence, it is Amy said "we," so just imagine for example the "we" that Amy means were Amy and Tom, they drew a picture last week.
Now that's the problem. If the answer is "Amy said that we had drawn....." so that means you are Tom!!!!! But this is wrong because you are not! so the correct answer should be "Amy said that they had drawn...." simply because you are not one of the "we."
