If there are two sentences, the second sentence will read as:
I could tell that it was pretty old from the cover of the book.
Hence, to merge the two sentences into one with the linkage on the common object, we have to change the latter part from from the cover of the book to from the cover of which.

which and that can be used to elaborate noise. But there is a comma behind noise , meaning this elaboration is not compulsory to identify the noise. In this case, we have to use which only.
