Jelly with some fruits did not set?? (quick answer)

Last Friday i have done one experiment was about the jelly. I used the fresh apple and fresh kiwi. The fresh apple has set up but the fresh kiwi was half set up. This experiment was the fair experiment. Why the fresh kiwi only half set up? What is the relationship?

There are some proteins in the jelly, they from bonds to build up the structure of the jelly, then the jelly becomes solid.

But there is some protease (enzyme) in Fresh kiwi, which breaks drown the protein in the jelly, so the jelly is only half set up. If the concentration of the kiwi is high, may be the jelly can not set up totally.

There is no protease in apply.
