為何檸檬能分解油污?

因為檸檬有檸檬酸 citric acid
citric acid 係 polar
oil 有 hydrophobic tail and hydrophilic head
head 溶左 in acid

oil break into droplets and will not stick back due to repulsion

the bond between them is ester bond
and so oil is called triester
