Potato Cakes – Country Style

Ingredients:
Potato 2 nos. (about 9 taels)
Chinese mushroom 2 nos.
Dried shrimp 1 tbsp.
Onion ½ no.
Celery 2 stalks
Egg yolk 1 no.
Cornflour 5 tbsp.
Seasoning:
Salt ¼ tsp.
Cornflour ½ tbsp.
Tang-flour 1 tbsp.
Cooking Method:
1. Wash potato. Peel and slice. Steam potato for 20 minutes with high heat.
2. Mesh potato. Season.
3. Soak and dice mushroom and dried shrimp.
4. Dice onion and celery.
5. Mix all the ingredients together. Divide the potato mixture into 8 portions. Shape each portion into a potato cake.
6. Coat the potato cakes with egg yolk and cornflour.
7. Shallow-fat-fry the potato cakes with moderate heat until golden brown. Serve.
Stir-fried Mushrooms With Fresh Fruit

Ingredients:
Whole pineapple 1 no.
Macadamia nut 4 taels
Fresh asparagus 4 taels
Straw mushroom 4 taels
Button mushroom 4 taels
Carrot 2 taels
Green pepper 1 no.
Red chilli 2 nos.
Curry powder 1 tsp.
Seasoning:
Sugar 1 tsp.
Salt ½ tsp.
Cornflour ½ tsp.
Water 2 tbsp.
Cooking Method:
1. Remove fresh from the pineapple. Dice and soak in salt water for 5 minutes. Drain. Leave the rest of the pineapple as a container for later use.
2. Cut the fresh asparagus into 1” lengths. Par-boil. Drain.
3. Cut the straw mushrooms and button mushrooms into smaller size. Par-boil. Drain.
4. Dice the carrot, green pepper and red chilli.
5. Heat the wok, add in 1 tbsp oil, sauté curry powder, add in vegetables and fruit, stir well. Add in the sauce and macadamia nuts, mix well. Put the dish into the pineapple container. Serve hot.

This dish has a wonderful presentation as well as equally impressing flavour.
Ingredients:
White asparagus 1can (reserve brine for later use)
Green asparagus 1can (reserve brine)
Thick red pepper 2pcs
Seasoning:
Sauce:
shaoxing wine 1/2tbsp
salt 1/3tsp
chicken powder 1/4tsp
brine from canned asparagus 3/4cup
cornstarch 1 1/2tsp
oil 1tbsp
dash of sesame oil
Cooking Method:
Drain both kinds of aspapragus. Reserve the brine.
Cut pepper diagonally to form pepper rings.Put several stalks of asparagus into pepper rings, then briefly fry in oil,drain well and then place on plate.
Bring sauce ingredients to the boil, add in oil and sesame oil, then pour over asparagus rolls and serve.
