Generally, your schedule is good.

If you haven't been to Milan before, I don't recommend you arriving Milan so late. Flight will arrive in Milan at around 22:00 and we will reach the city centre at 23:30. It's already so late and not easy to find the accomodation even though you have booked it. If you don't mind staying in Gatwick for a night, you can do it.
There is only one train service company in Italy, which is called Trenitalia. For all journey you have mentioned in the question, you can finish all of them by train. Rome to Florence will be around 2 hours, Florence to Pisa 1 hour, Florence to Venice 3 hours, Venice to Milan 3 hours, Milan to Paris 8 - 9 hours night train. You can also choose flight to travel from Milan to Paris.
If you will fly from Milan to Paris, then for other journey, you can buy single tickets and no need to buy a train pass. If you travel all journey by train, then getting a France-Italy pass will be a good idea.
The price of train ticket bought online and at site in Italy will be the same.
Of course you can skip Florence and go to Pisa directly from Rome. It will cost you 5 hours. But I strongly recommend you to visit Florence which is so so so pretty. After visiting Pisa, if you have enough time, just go to next stop, no need to stay there for a night. From Pisa to Venice or Milan, you can also travel by train, but most of the time you have to change in Florence.
