Egg shell is made of calcium carbonate (CaCO3). Vinegar is the aqueous solution of ethanoic acid (acetic acid, CH3COOH).

When egg shell and vinegar come together, calcium carbonate reacts with (dissolves in) ethanoic acid to give calcium ethanoate solution ((CH3COO)2Ca), gas bubbles of carbon dioxide (CO2), and water (H2O). The equation is
CaCO3(s) + 2CH3COOH(aq) → (CH3COO)2Ca(aq) + H2O(l) + CO2(g)

Ways to increase the reaction rate :
(1) Use more concentration vinegar.
(2) Increase the temperature.
(3) Ground the egg shell into power to increase its surface area.
