義大利肉醬一:

材料:(一人份)
沙拉油(或橄欖油)10g、牛細絞肉40g、洋蔥茉20g、蒜泥1g、胡蘿蔔絲15g、蕃茄糊15g、白葡萄酒30g、牛高湯250g、月桂葉1/3張、意大利香料粉0.3g、鹽、糖、B.P 1/3小匙

作法:
水加鹽加熱煮開,加麵煮15分鐘(如不立即食用,則拌入奶油或橄欖油以免黏住)橄欖油加牛肉炒熟盛出~少油加洋蔥茉、蒜泥、胡蘿蔔絲、蕃茄糊、酒、牛高湯煮開,加入月桂葉、意大利香料、糖、鹽、B.P不加蓋煮40分鐘至濃稠


義大利肉醬二:
材料:約六人份
豬絞肉、牛絞肉各半(約各半斤)、細拉麵乙斤、洋蔥一個、大蒜數瓣、磨菇罐頭乙罐、市售義大利麵醬乙罐、蕃茄數粒(或蕃茄罐頭乙罐,選已切妥的)、米酒半罐(或至少一杯)、麵粉少許

作法:洋蔥切丁、大蒜切末、磨菇取出後切片、蕃茄切丁(罐頭則不必)
起油鍋,炒香大蒜、洋蔥丁後,先放豬絞肉,至半熟後、再放牛絞肉拌炒,待肉類皆金黃後,倒入米酒(至少四分之一罐) 煮開後倒入義大利麵醬、磨菇片、蕃茄、水加至將材料蓋過,大火煮開後,改小火燉約一小時入味 ~起鍋前撒入麵粉,使湯汁濃稠即可,麵煮好後拌入醬料上桌食用


義大利肉醬三:
材 料:
絞肉半斤 蕃茄3顆 蒜頭一瓣 洋蔥1顆 紅蘿蔔末少許 芹菜末少許 洋菇7~8顆 蕃茄汁半罐<小> 蕃茄醬3~4大匙 鹽適量 水自己增酌 義大利香料少許

做 法:先將蒜頭末爆香,加入芹菜末和胡蘿蔔末略炒後加入洋蔥末炒勻.加入絞肉炒至絞肉顆粒分明後加入洋菇丁炒.加入蕃茄丁<蕃茄先燙過後去皮切丁>.水.蕃茄汁.蕃茄醬後煮到湯隻稍微減少後加入鹽調味後即可.

Chicken spaghetti with cheese.

INGREDIENTS:
4 to 6 chicken breasts, cooked, reserve broth
1 bell pepper. green or combination
1 onion
1 can cream of chicken soup
1 can cream of mushroom soup
1 can Ro-Tel tomatoes, (with green chiles)
1 can stewed tomatoes
1 package spaghetti, (16 ounces)
1 package shredded cheddar cheese, (16 ounces)

Cook spaghetti in broth. Chop chicken and saute with pepper and onion in a large skillet until vegetables are softened. Add soups, Ro-Tel, and stewed tomatoes. Cook on low until bubbling, then stir in chicken and spagetti.

If skillet is not oven safe, transfer to a lightly greased baking dish. Top with cheddar cheese and bake at 350 degrees for 20 to 30 minutes.
Serves 4 to 6.
