As hsbc, if you would like to open a NZD Time Deposit account
minimum is NZD2000 then you can start one
and if as today's indication, if the tenor is 2 weeks then the interest rate is 5.3500%
so, if you have NZD2500, you can first, use NZD2500 to open an NZD time deposit, then set as 2 weeks, and provide the Mature Instruction as Repay Principal (本金) and Interest to your HKD saving account. Then the exchange rate (匯率) will apply on the date of maturity date (到期日) when they really process the execution (put back the NZD to your HKD)
I've also included their interest rate table for your reference as the link below

Under the "Show me HSBC's deposit rates for :", you just need to select New Zealand Dollar then that will do
Hope that's helpful :)

if as your remarks - If initially holding the HKD and not NZD, then so, first, will have the exchange rate apply on HKD exchange to NZD, then NZD 2 weeks Time Deposit rate as 5.35% then when mature, NZD exchange back to HKDso, there will be 2 times on exchange rate occured, when start and when end
