正確係 why don't you go shopping?

I think is better for you to use
1, Why don't you go shopping or
2, Why don't you go to shop
because after to, it's better for us not to change the form of word in this case.

Why DON'T YOU go (TO) shopping?
另外補充一點，正確英語既語法 TO 後面係唔會出現 +ING form，但由於 shopping 一字已經被日常用語當成名詞使用，所以 go shopping / go to shopping 都通用。
