梳乎厘既起原

梳芙厘（法語：Soufflé，又譯梳乎厘）是輕和蓬鬆的法國甜點，材料包括蛋黃和蛋白,起源於法國。Soufflé的法語含義是「炸毀」。

梳乎厘Souffle法文有「膨脹」的意思，它的主要成分為蛋白，吹彈得破是一般人對它的印象，皆因出爐後的梳乎厘，外形只能維持數十秒。梳乎厘一般分為甜及鹹，鹹食的梳乎厘常見於主菜，可配搭芝士、肉、魚、蔬菜，而作為甜品的梳乎厘亦可分焗製和冷凍。

梳乎厘(souffle) 於18世紀晚期由法國人發明。
