Train are not that cheap in compare with flight so I suggest you should book early via Easyjet and you will have a easier journey from Gatwick to Edinburgh after 12 hours from HK to Gatwick.

If you insist to take the train, you can buy Saver return / open return. Cheap single ticket may not be a good idea because you may not be able to change date and time.

Finally, there is no need to buy Europe train pass unless you need to travel to other european countries.

It depends on your personal preference really. To catch a train from london to Edinburgh, you need to go to Kings cross station first, which is quite a bit of travel on train from gatwick. So, if you have a lot of luggage with you, it is not a very comfortable choice after a long haul flight. But the scenery from London to Edinburgh is absolutely gorgeous, so it might be worth the trouble.
