it should be safe, as long as that's the registered, so need to have someone to sign for receipt, you won't have any lost, coz if you have not receive, then as your buyer to reissue another one for you, but to protect yourself, you better not to mail the product to the buyer just as quick

咁我係香港銀行兌現既時候要收幾多錢手續費?
defferent bank have different charges, you need to check with your banker, but most of the bank, when they process that for you, other than the charges, that might also take you 3 weeks for the clearing procedure, since if not by the same banker, or they are not too sure about the cheque, then they will send the cheque back to the sender's bank for clearing, it's send for collection, so, even you receive the cheque that does not mean you will have the money for sure

佢寫支票個陣係寫港幣定台幣,可唔可以寫港幣?
if the cheque is a TWD cheque then it has to write in TWD
like in HK, if the cheque book is for HKD, then you have to write HKD and u cannot write for TWD

I would suggest you to ask the buyer for the telegraphic transfer to send/wire you the money, coz that is the most efficient way and the safest way to your protection. usually that will take 1-2 days and once the money arrive, then it's all guarantee that's yours without any worry on bouncing cheque (if cheque is used), but most bank when receive telegraphic transfer, there will be an inward telegraphic transfer charge apply, so please check with your banker

不要收外國支票, 1) 兌現時間長, 因為銀行要找台灣銀行對數, 有可能多過半個月時間.
2) 如果對方户口冇錢, 退票的話, 你會損失貨品.
3) 對方有誠意買貨的話, 應該做 T/T 或者經 Western Union 滙錢
4) 有很多銀行都唔做托收外國支票 la.
