為何蛋糕中間部份未熟透呢?

為何我依足程序去做蛋糕, 但總是外燶, 而裡面不熟, 而且中間部份還會突起(似火山), 為甚麼呢? 我所焗的是一個綠茶蛋糕, 用180度火, 跟足食譜去做!
那個次序要注意呢?

因為焗爐温度太高,所以面好快燶,而蛋糕中心未受到足夠的熱,所此裡面不熟。另外,你的焗爐是那種?你的焗爐有冇上下發熱管?有冇做預熱程序?還是預熱太久?焗了多久?

You might have set the temperature of your oven to 180 degree, but actual temerature might vary. Base on your description above, I guess temperature was too high, therefore side rim of the cake cooked too fast and wouldn't raise, and centre of the cake kept on raising during baking, so it would raise like a peak. Try to set the temperature lower, but unfortunately nobody can tell how much you should adjust, you can only tell by tests, or you can buy a thermometer specially for the oven (you can find it in Wing On Department Store on Nathon Road or some other bakery needs store),try a few times and I'm sure you will be sucess, enjoy your cake!
