Because it's gonna be kinda wierd.
I've talked as much as Tom did tonight.
He ate as much as he could eat.
The robber stole as much money he could find.

We use "talk" to describe the conversation between two persons, use "say" to describe what a person has said, and use "tell" to describe what a person tells the other one.

今天我說的跟tom昨天跟我說的一樣多

You may consider this:

What I have said today is as much as what Tom told me yesterday.
or
What I have told you today is as much as what Tom told me yesterday.

or

我說的跟tom昨天跟我說的一樣多

I have said as much as what Tom told me yesterday.
or
I have told you as much as what Tom told me yesterday.

In fact, in this context, using "exactly" is better.
e.g. I have told you exactly what Tom told me yesterday.

Other examples of using "as much as":

*Please help carry as much water as you can.

*This container can hold as much as other containers do.

*May I have as much rice as possible?
