有四枝試管,各載有相同體積的蛋白凝固方塊。將不同的溶液加入試管內,並將它們置於攝氏30度的環境中。以下顯示加入各試管的溶液,及24小時後觀察所得的結果:

試管1
加入的溶液 :2cm3鹽酸,2cm3溶液A
24小時後的結果:無蛋白方塊
試管2
加入的溶液 :2cm3蒸餾水,2cm3溶液A
24小時後的結果:有蛋白方塊
試管3
加入的溶液 :2cm3蒸餾水,2cm3鹽酸
24小時後的結果:有蛋白方塊
試管4
加入的溶液 :4m3蒸餾水
24小時後的結果:有蛋白方塊

(1) 從試管1和3的結果,可得什推論?

(2) 若將試管2的結果一併考慮,可再得什麼推論?

(3) 如何能確定所得的結果是由於溶液A內酵素的作用?

(1) 從試管1和3的結果,可得什推論? 只有在溶液A及鹽酸共同出現時才可以令蛋白方塊消失.因為在試管3,即使有加入鹽酸2m3,在24小時後的結果是有蛋白方塊出現而未有消失.這是因為缺少了溶液A之故.

(2) 若將試管2的結果一併考慮,可再得什麼推論? 鹽酸的出現與否直接地影響
溶液A對蛋白方塊的消失與否(即是溶液A的消化能力).


(3) 如何能確定所得的結果是由於於溶液A內酵素的作用?只要把酵素加熱到超過80度即可,因為這個溫度會令酵素變性(denature)從而失去消化能力.而一但酵素變性出現,蛋白方塊便無法被消化,這也表明消化能力是出於溶液A內酵素的作用.

(1) the disappear of egg white is due to the present of solution A. It is because the different between tobe 1 and tube 3 is the present of solution A.

(2) solution A work ( make the egg white disappear) only with the present of acid.

(3) in the control set, all the condition are same sa tube 1, escept the solution A. boil the solution A before it is add in the tube. then the egg white still present although there is acid. it provide that egg white is digested by the enzyme n solution as the enzyme denatured after it is boil

(1)Soluton A contains enzymes which can break down(catalyze) protein.

(2)The enzyme can only work properly under acidic condition.

(3)Set up the same test tube 1 but change solution A with another solution(different from sol. A).If the egg white is still congulated,then the result of the breaking down of protein is due to enzyme in soultion A.
