Below is what I know:

APA Summer course has Ms Eriko Ochiai Teaching Advance ballet,
She is quite good, i have taught by her in the past, a patient and nice teacher, but sometimes would get angry if you are not doing well

L'ecole de Jeune Ballet (EJB) 專業青少年芭蕾舞學校 also has many ballet teachers, Ms Eriko Ochiai also teacher there too.

JMW School of ballet has one japanese teacher called Ms Yoko Ashibu, she is very nice and patient and she had never get angry (at least in front of her students) and I had also been taught by her.

Vivian Kwok school of ballet has a special class for japanese people, so call "Japanese Ballet Class", which is teaching by a japanese teacher and all the languages used during class is japanese.

There is also a school in wan chai opened by a Japanese teacher Ms Eri, I had also been taught by her, but in my opinions, she is a little bit strict and harsh.

Actually there are many japanese teachers in hong kong, but only in different schools, if you really wanna search for a japanese teacher, it's not very hard.
