Tiramisu
Ingredients:
1>500g (2 cups)mascarpone (cheese)
2>100ml crème fraiche (if unavailable, sour cream can be used)
3>150g (2/3 cup) caster sugar
4>60ml (1/4 cup) rum or brandy
5>250ml (1 cup) strong black coffee
6>1 packet sponger biscuits
7>60ml (1/4 cup) framboise (framboise is a strawberry-flavored liqueur that is also delicious added to champagne)
8>50g chocolate, grated
9>strawberry coulis (optional), to serve
10>strawberries, to serve
Methods:
1>Place mascarpone, crème fraiche and sugar in a bowl and mix well
2>Combine rum or brandy with coffee in a jug
3>Place a layer of biscuits in a flat-bottomed, glass dish and soak with coffee mixture
4>Drizzle half framboise over biscuits
5>Cover biscuits with a third of mascarpone mixture
6>Repeat layers twice more, finishing with a layer of mascarpone
7>Sprinkle with grated chocolate and refrigerate at least two hours until set
8>Invert onto plate
9>And serve with coulis and strawberries, if desired
