The 3 wines that you selected are decent quality Bordeaux wine which do not require too much bottle aging time. The first 2 are from the left bank which has more tannin when compare with the 3rd one from Saint-Emilion (right bank).
Compare with the 3, I will drink the Chateau Tayac 1st since it is relatively weak among the 3. Also considered with the fact that 2001 Margaux is not a very outstanding year for Bordeaux left bank anyway.
Your Chateau Canteloup will be the 2nd to tackle. It is slightly better in quality (Cru Boureois Classe). This 2000 Medoc is a better vintage year. Hold it for a year or 2 will not hurt to smooth out the tannin.
Since the Chateau Peyroutas are better in quality among the 3 (Grand Cru Classe), it will continue to mellow out in the next 4 to 6 years (70% merlot and 30% Cab Franc). So, you can hold on to this one until closer to 2009 or 2010.
