Four Seasons host a French restaurant, Caprice, and Chinese restaurant. I don't think Caprice offers buffet dinner - buffet is not really a French thing, and you only find buffet meals during festive seasons in France. Caprice is one of the better French restaurants in Hong Kong, but it charges like the top restaurants in the world. I would suggest bringing no less than $1000 per person, excluding wine. The prix fixe menu starts from around $800 or so, which is even more than some of the better restaurants in New York or Paris!
Make your reservation in advance, ask for a window-side table, and don't forget the cheese platter at the end of the meal before the dessert!
