鮮茄燴牛肉




牛柳 - 250克 蕃茄 - 3個 洋蔥 - 1/2個 青豆 - 1-1/2湯匙 蒜蓉 - 1湯匙



梳打粉 - 1/4茶匙 水 - 2湯匙 糖 - 1茶匙 生粉 - 1/2茶匙 生抽 - 1/2湯匙 老抽 - 1/2茶匙 油 - 1湯匙



水 - 100毫升 茄汁 - 2-1/2湯匙 糖 - 1湯匙 生抽 - 1/2湯匙 生粉 - 1/2湯匙



1. 牛肉切片,加調味料醃半小時。
2. 蕃茄,洋蔥切角,青豆拖水。
3. 燒3湯匙油,將牛柳炒至八成熟,盛起。
4. 燒1湯匙油,爆香蒜蓉及洋蔥,加入蕃茄,青豆及獻汁,煮滾,加入牛肉,便成。





蕃茄含有豐富的維他命a、c,而牛肉又含有鐵質,兩種營養同時吸收,唔怕流失。另外,夏天工作完之後,通常冇咩胃口,這個餸可以增加食慾。

Beef with Tomatoes
250 grams of beef tenderloin, 3 tomatoes, 1/2 an onion, 1+1/2 tablespoons of green peas, 1 tablespoon of crushed garlic
(marinate for the beef) 1/4 teaspoons of soda, 2 tablespoons of water, 1 teaspoon of sugar, 1/2 teaspoon of corn starch, 1/2 tablespoon of light soy sauce, 1/2 teaspoon of dark soy sauce, 1 tablespoon of oil
(sauce) 100 cc of water, 2+1/2 tablespoons of ketchup, 1 tablespoon of sugar, 1/2 tablespoon of light soy sauce, 1/2 tablespoon of corn starch (mix the above to make a sauce)
1. Slice the beef. Marinate for half an hour.
2. Cut tomatos and onion into wedges. Blanch the peas.
3. Heat 3 tablespoon of oil in a pot, put int beef and stir-fry until barely done. Remove it from heat.
4. Heat 1 tablespoon of oil in a pot, put in garlic and onion. Fry them until the aroma can be smelt. Put in tomato wedges, peas and the mixed sauce. Bring it to boil. Put in Beef. Dish.

Tomatoes are rich in vitamins A and C and beef is rich in iron. Taking the nutrients together helps maximise the intake of both. Moreover, it is a nice dish to be served in summer time, when we often lose appetite after a day's hard work.

我的(多事)意見:
1. 第一行材料很明顯是主要食材, 沒有問題. 但第二行和第三行材料沒有標題, 內容又有重覆, 起初不知道是甚麼. 細看並加上推斷才知道第二行是醃牛肉的材料, 第三行的材料要混和成為芡汁. 所以我在英文之中加上了說明.
2. 這個菜很好, 可是用油好像太多了一點. 先用3湯匙油爆炒牛肉好像太多, 用一湯匙也夠, 要牛肉滑可以在醃時加1茶匙油. 我猜這個食譜是家政科的功課, 看來十分好, 不過在這流行健康飲食的時代, 老師可能會挑剔這些的.

Beef in Tomato Sauce

(Ingredients)
Steak Fillet - 250g
Tomato - 3
Onion - 1/2
Green Pea - 1 1/2 Tbsp
Minced Garlic - 1 Tbsp

(Seasoning)
Baking Soda 1/4 tsp
Water - 2 Tbsp
Sugar 1 tsp
Cornstarch 1/2 tsp
Soy Sauce 1/2 Tbsp
Dark Soy Sauce 1/2 tsp
Oil 1 Tbsp

(Sauce)
Water 100 ml
Ketchup 2 1/2 Tbsp
Soy Sauce 1/2 Tbsp
Cornstarch 1/2 Tbsp

(Method)
1. Cut beef into slices, add seasoning and marinate for half an hour.
2. Quarter tomato and onion. Blanch the green peas.
3. Heat 3 Tbsp of oil (in wok), stir fry steak fillet until medium-well done, set aside.
4. Heat 1 Tbsp of oil (in wok), saute the minced garlic and onion. Add in tomato, green peas and sauce, bring to a boil. Add steak. Ready to serve.

Tomato is rich in vitamins A and C, and beef in iron. Eating both together will improve absorption of both nutrients. Moreover, in summertime, appetite is often low after a day's work, and this dish can improve appetite.
