Why is it "Mother's Day" instead of "Mothers' Day"?

We only celebrate on Father's Day and Mother's Day but Children's Day.
Reason: we only have one father and one mother that give birth to the embrio of the new born baby. But there are many children in the world for us to celebrate.

because it means every single mother in the world

As usual, you only have ONE mother. Mother's Day means Day of Mother - the day belongs to mother, not other ones.
