Stir Fried Udon with Assorted Shreds
Ingredients:
Udon Noodle 200g
Chiu Chow Fried Fish Cake 50g
Mung Bean Sprout 25g
Young Chinese Chive 15g
Mushroom 2
Egg 1
Oil 3 Tbsp
Sauce Ingredients:
Salt 1/4 tsp
Sugar 1/2 tsp
Dark Soy Sauce 2 tsp
Water 2 tsp
Method:
1. Soak mushroom to soften, beat egg.
2. Prepare sauce.
3. Wash chives and bean sprouts, drain; cut yellow chives into lengths of 4cm.
4. Wash fried fish cake and mushroom, slice into shreds.
5. Heat 1/2 tbsp of oil (in wok), cook egg batter to a thin sheet, shred.
6. Heat 1/2 tbsp of oil (in wok), stir fry bean sprouts for two minutes, set aside.
7. Heat 1 tbsp of oil (in wok), stir fry fish cake and mushroom for two minutes, add chives and bean sprouts, stir well then dish up for later use.
8. Heat 1 tbsp of oil, stir fry udon over low heat, add in sauce and other ingredients. Fry well, serve while hot.
