食物添加劑是甚麼?

食物添加劑是指在食物製造或加工過程中加入的天然或人工製成的化學物質。香港法例規定,食物添加劑並不包括增強食物養份的維他命和礦物質或用以調味的鹽、香草或香料等。

食物添加劑的作用

食物添加劑主要作用包括延長食物的貯存時間,增加味道、香味,改善顏色,保存或增加食物的營養價值和促進食物的外觀,使食物的生產、加工、包裝、運輸及貯存更方便,從而能向消費者提供各種價格合理、品質穩定的食物。

使用食物添加劑的準則

使用食物添加劑要從消費者及製造商雙方的利益考慮。但由於添加劑的用途特殊,容易造成濫用,損害消費者的利益。所以在以下的情況,就不應使用:

1.用以掩蓋缺點,例如使用於已變質或腐壞的食物原料。
