Mediterranean Braised Chicken

Ingredients

· Dressed chicken - 1 (approx. 1.5 kg)
· Garlic (minced) - 2 cloves
· Onion (chopped) - 1
· Red bell pepper (shredded) - 2
· Red wine - 1/4 cup
· Tomato sauce - 2 cups
· Water - 1/2 cup
· Tomato paste - 1 tbsp
· Black and green olive - 1/2 cup
· Thyme - 1 tbsp
· Salt and pepper - to taste

Methods

First , Rinse and chop chicken into 8 pieces.
Next, Heat 4 tbsp of oil, brown chicken pieces evenly and remove.
Then, Saute garlic, onion and red pepper with the remaining oil, pour in red wine while the pan is still hot, bring to the boil
After, Add tomato sauce, water and tomato paste, stirring well.
Finally add chicken, olives and thyme. Simmer for 20-25 minutes, season to taste and serve

Sauteed beef with Assorted fruits







Ingredients:







beef 330g
pineapple 2slices
apple 1/2pc
garlic 1 clove
green onion 1 stalk
red chili some










Seasoning:







wine 1tbsp
sugar 2tsp
salt 2tsp
water some
some of oyster sauce and sesame oil










Cooking Method:







Cut pineapples and apples into small pieces. Crush garlic. Cut green onions into shorter lengths.
Shallow fry pineapples, apples and beef in hot oil.
Heat oil in wok, stir fry minced garlic, green onions. Add in beef slices, add wine and rest of seasonings.
Put in pineapples and apples and stir briefly until combined and serve.

Beef fillet in black pepper sauce







Ingredients:







Tender beef fillet 320 g
onion 1 pc
carrots 1/2pc
green bell pepper 1/2pc










Seasoning:





Marinade:

light soya sauce 1tbsp
cornstarch 1tbsp
sugar 1tsp

Seasonings:

Chili oil 1 1/2tbsp
light soya sauce 1 1/2 tbsp
water 1tbsp
wine 1tbsp
sugar 1tsp
cornstarch 1tsp
sesame oil 1tsp
black pepper 1/2tsp











Cooking Method:







Cut onions, carrots and green pepper into shreds. Cut beef into thick slices and marinade for at least 30 minutes.
Heat oil in wok, and shallow fry beef briefly and take out. Drain away excess oil.
Heat some oil, stir fry onions, carrots and green bell pepper. Add in seasonings and cook for a while.
Add beef into sauce and stir well over high heat.

Stir fried short-ribs in pepper sauce







Ingredients:







450g short-ribs
2 shallots
1 1/2 tsp black pepper(unground)











Seasoning:





Marinade:

1 tbsp ginger juice
1 tbsp wine
1tbsp light soya sauce
1 tsp cornflour
a pinch of pepper


Seasoning

1 1/2 tbsp light soya sauce
1/2 tbsp suger











Cooking Method:







Cut shallots into slices for later use.
Rinse short-ribs briefly and wipe them dry. Chop ribs into sections and blend in marinade for 20 minutes.
Deep-fry marinated short-ribs till thoroughly dry. Drain excess fat for later use.
Heat 2 tbsp oil to saute shallots, put in short-ribs and splash wine. Pour in seasonings and black pepper, stir fry till sauce dries up. Dish up and serve.
