Yeasts are a growth form of eukaryotic microorganisms classified in the kingdom Fungi. Approximately 1,500 species of yeasts have been described,[1] most of which reproduce asexually by budding, although in a few cases by binary fission. Yeasts are unicellular, although some species with yeast forms may become multicellular through the formation of a string of connected budding cells known as pseudohyphae, or true hyphae as seen in most moulds.[2] Yeasts size can vary greatly depending on the species, typically measuring 3-7 microns in diameter, although some yeasts can reach over 40 µm.[3]

Researchers can use it to gather information into the biology of the eukaryotic cell and ultimately human biology.[4] Other species of yeast, such as Candida albicans, are opportunistic pathogens and can cause infection in humans. Yeasts have recently been used to generate electricity in microbial fuel cells,[5] and produce ethanol for the biofuel industry.

However, enzymes do differ from most other catalysts by being much more specific. Enzymes are known to catalyze about 4,000 biochemical reactions.[2] Although all enzymes are proteins, not all biochemical catalysts are enzymes, since some RNA molecules called ribozymes also catalyze reactions.[3]
Enzyme activity can be affected by other molecules. Inhibitors are molecules that decrease enzyme activity; activators are molecules that increase activity.
