At room temperature, small esters are liquid. Among esters, only methyl methanoate is miscible with water, and all others are immiscible with water. In the experiment of making an ester, all reactants and the catalyst are soluble in or miscible with water and thus there is only one liquid layer (aqueous layer). Since the ester formed is immiscible with water and its density is smaller than that of water, the ester forms a liquid layer on the top of the aqueous layer. This is just like oil flows on water to form two liquid layers.
