韭黃牛肉
Fried beef with chives
材料
牛肉 225公克
大蒜 60公克
韭黃 150公克
Ingredients:
225g beef
60g garlic
150 Chinese yellow chives
調味料
A料:生粉1小匙. 麻油 2大匙.雞粉、鹽各1/2小匙
B料:米酒、蠔油、醬油、雞粉各1小匙.清水1/3杯
Seasoning
A: 1 teaspoon corn starch; 2 tablespoon sesame seed oil; 1/2 teaspoon chicken powder; 1/2 teaspoon salt
B: 1 teaspoon of rice wine, oyster sauce, soy sauce and chicken powder. 1/3 cup of water
煮法
1) 大蒜去皮,切片;紅辣椒洗淨、切絲;韭黃洗淨、切段;雞蛋打入碗中濾除蛋黃,留下蛋白備用。
2)牛肉切條,放入碗中加入A料及蛋白攪拌均勻,略醃約10分鐘,再放入溫油鍋中燙至七分熟,撈出,瀝乾油分備用。
3)鍋中倒1大匙油燒熟,爆香大蒜,放入韭黃、紅辣椒及B料炒香,再加入牛肉炒至入味,即可盛出
