It is very famous, its customers include diners from Hong Kong, foreigners, and Japanese. Besides, the manager and cook of more than 50 yo can speak in fluent English and Japanese. This is why the foreigners like them very much. Booking is a must. It is advised to arrive the restaurant in person before 7:30pm, with booking. Otherwise, you have to wait for a long time. If you do not arrive on time, the table would be allotted to others. If you want to have shark's fin soup $560 (as far as I remember) to celebrate your mom's birthday, you have to reserve that dish when you book your table. There is no need to reserve roasted peking duck. Booking of 教 化 雞 $280 is needed.
I suggest you to order 教 化 雞 and Shark's fin soup for your mom's birthday dinner.
2) Peking Restaurant
北京酒樓 (this is not 北京樓 of Maxim's Group)
2/F, Cumberland House, 227 Nathan Road, Jordan, Kowloon, Hong Kong. (1 minute walk from MTR Jordan Station Exit C1)
九龍佐敦彌敦道227號金百龍大廈2樓
Tel: 27351316
Opening Hours: 1100 - 2300 Daily
Style: Peking
Average spending: $100

This is also an old restaurant. The service of those old-guy waiters is poor, but to me, I would accept that this is their real character. There is no booking in this restaurant, you have to queue up in person.
3) Tin Oi Tin Restaurant (The Sky View Restaurant)
天外天中菜館
14A, C & D Riviera Mansion, 59 – 65 Paterson Street, Causeway Bay, Hong Kong. (3 minutes walk from MTR Causeway Bay Station Exit E)
香港銅鑼灣百德新街59-65號濱海大廈14樓A室
Tel: 28810338
Opening Hours: 1130 - 2330 Daily
Style: Peking / Guangdong

This is a restaurant with seaview of Victoria harbour. Of course, you have to request in your booking. I also like this restaurant. It is not easy to find this restaurant, you have to ask in details on the phone.
It is claimed to be a restaurant of Peking food. But in openrice, it said it serves guangdong food. In my experience, it should be a mix.
4) Maxim's Group
In this group, there are several restaurants of Beijing foods. They all provide delicious beijing foods, but at a comparatively expensive price. This is up to you.
