Why is NaHSO4 (acid salt) formed when excess H2SO4 is added to NaOH , but when excess NaOH is added to H2SO4 , only Na2SO4(normal salt) is formed ?

When H2SO4 and NaOH exist together. When H2SO4 is in excess, that means after all NaOH reacted, there still excess H2SO4. only the most easily ionized hydrogen of H2SO4 will be reacted. NaHSO4 is formed.
When NaOH is in excess, that means after all H2SO4 reacted, there still excess NaOH. All ionizable hydrogen of H2SO4 will be reacted, the result is Na2SO4.
It just depend on which subtance is in excess.
