For straight through cable, the order should be:
white/orange, orange, white/green, blue, white/blue, green, white/brown, brown
for both ends.
For crossover cable, the order should be:
white/orange, orange, white/green, blue, white/blue, green, white/brown, brown
for one end and the other end should be:
white/green, green, white/orange, blue, white/blue, orange, white/brown, brown.
Besides, if the cable is used for 1000bps or even higher speed, all of the 4 pairs of wires should be used. If the cable is just for 100bps or even slower, only white/orange, orange, white/green and green are needed. So that's why a cat5 cable can be used to make two connections.
Moreover, according to Cisco, a straight through cable is used between host-hub, host-switch, switch-router. a crossover cable is used between host-host, host-router, switch-switch, hub-hub, switch-hub. However, nowadays all most all switches and routers (except Cisco =_='') can all auto-sense the cable (auto-MDI), so there is less important for using a straight through or clossover cable already.
