Hi... I think you will be travelling in quite a nice pace since you will be occupied during the first week...and visiting two countries (sure you need to select a few places to visit) in a week is just fine. really depends on what you want to see.
Venice is a great place to go too apart from Florence, if you do have the time! It's a lovely city! Great people and Great food.
Will you go to both Warsaw and Krakow in Poland? If you decide to only visit one place in Italy and one place in Poland, then I'd suggest you to stay around 4 days in Italy and 3 days in Poland....cos it's more to see in Italy (museums etc) Both countries are nice and like all other places, crime exists! But just be a bit more careful when you're in Italy. quite a lot of pickpockets in a crowded place.

Regarding the accomodation, staying at the Youth hostels is completely okay and it's what most young people (and even couples and family) do in Europe. They are generally safe, clean and tidy, so don't worry.
