2.Melt 3/4 of portion over hot water until it reached 40'C.
3.Remove from heat and stir in the remaining 1/4 portion until the chocolate is melted.
4.Dip the tip of of a knife into the chocolate and it should be set in 3 minutes at room temperature (18C to 20C),if it is completely tempered .If not,you should keep agitate the melted chocolate until it reached the tempered temperature.
