Other than serving alcohol to those customers older than or meeting legal drinking ages, responsible service of alcohol also refers to serving alcoholic beverages bases on customer's condition: for example, a responsible bartender will cut down the alcoholic content of the cocktail if he sees the customer showing signs of alcoholic intoxication, or refuse to continue serving alcohol to those who cannot handle more alcohol anymore.
I've seen some responsible bar tenders will "go easy" on alcohol for those beginning drinkers or female drinkers.
