手卷[TEMAKI~てまき] (Hand-rolled sushi)
要做出出色的手卷,秘訣在於捲製的速度.手卷以紫菜包裹,
用的壽司飯溫度會令紫菜變軟,所以好的手卷必須要盡快捲好,
送到客人面前.紫菜是手卷的靈魂,通常是以半張紫菜製成,
由於接觸的面積大,所以並非各種材料也可製成手卷.
水份較多或伴以汁液的材料都不適合做成手卷.
而據說手卷的始祖是東京銀座的築地玉壽司,後來才廣泛流傳.
Temaki-sushi was originally a meal for busy chefs. Since they had the
ingredients at hand, but lacked the time to make sushi for themselves,
they made it` with “hand-rolled-sushi.”
Temaki is a type of sushi that comes in a cone form.
