（"Phoenix" Style Water-chestnut Cream）



簡介： 馬蹄能夠清熱潤肺，生津消滯，舒肝明目和利氣通化。

材料： 鮮馬蹄（去皮、切碎）------12個
water chestnuts（peeled and chopped finely）　12
蛋黃------3個
egg yolks　3
椰奶------60毫升
coconut milk　60 ml
蜂蜜------3湯匙
honey　3 tbsp
冰糖------20克
rock sugar　20 g
水------1公升
water 1 L
七彩朱古力（切碎）------10克
multi-color chocolates （chopped finely）　10g
生粉------2 湯匙
cornflour　2 tbsp

製法： 1. 將馬蹄碎放入水中煮沸，加入冰糖、椰奶和蜂蜜同煮至水滾起。
Boil chopped water chestnuts in a pot of water, add in rock sugar, coconut milk and honey, and bring to boil.

2. 倒入少許芡汁，然後加入蛋黃，慢慢調拌成蛋花，移入碗中，最後灑上七彩朱古力碎即可。
Thicken with diluted cornflour mixture, add in egg yolks, stirring slowly to make egg flakes, dish out into a bowl and sprinkle with multi-color chocolates chips. Serve.
