When will you go there?? If you go on May or June, I suggest you can go to Port Stephens. Because you can join the local cruise tour to have a dolphin watch and whale watch. Some of the boat will have snookelling tools, you can enjoy the snookelling as well. Also, resorts near Port Stephens are quite nice. I am now still remembering the nice seafood buffet which I had last November. I don't think I can have such buffet again in Hong Kong. But going to Port Stephens need to drive for 2 hours more. If you are only planning a day trip, you will be so tired.
For Blue Mountains, for me, it's not so special. We can only see that three "sommets" and blue fog. There is 3 kinds of cable cars, but which are quite expensive...
If you have only 3 day time, Blue Mountain will be much better. Bceause you need to spend around 1.5 - 2 days in Sydney City Centre.

If you like dolphins and whales, then going to Port Stephens is good, you can have a one-day trip, but you will be very tired as it needs to drive 2 hours to arrive there. So you need to drive or stay in the car for 5 hours a day. Dolphins can be found now, but whales is rare now...
